Nghiên cứu phân tích thành phần hóa học cho thấy, trong rau đay có Ca 498mg%, P 93mg%, Fe 3,8mg%, K 650mg%, acid ôxalic 870mg%, vitamin B1 0,24mg%, vitamine B2 0,76mg%, vitamin C 168mg%, vitamin A 7,940 đơn vị, vitamin E 141. Trong hạt của quả rau đay có chứa nhiều glycoside khác nhau, nhưng chủ yếu là corchorosid và olitorisid.
